Campus Dining Report 2022

The following data were collected from publicy available sources and from New England colleges and universities who participated in the 2022 launch of the Campus Data Center. The Data Center streamlines data collection across multiple interest holders (e.g., dining directors, campus farm managers, and those leading food access efforts on campus); to collect more meaningful data about values-based procurement and other food system efforts at higher education institutions. At the time of data collection, colleges and universities were still adapting to major disruptions from the COVID-19 pandemic. The first few slides below provide an overview of the 183 campuses and the following provide data from our Data Center participants, of which there were 63.

About the Data Center

FINE has been collecting data from the campus sector since 2015, surveying all campuses with dining services in 2015 and 2018. In 2021, FINE began building a beta version of the Campus Data Center, a one stop shop for campuses to share data, generate reports, view progress over time, find tracking support, and more. The Data Center was designed to streamline data collection across multiple campus interest holders (e.g., dining directors, campus farm managers, and those leading food access efforts); to collect more meaningful data about values-based procurement and other food system efforts on campus, to create resources that campuses could use to tell the story of their farm to campus programs; and to increase the overall transparency of farm to campus activities. The Data Center design also included several new accountability systems to ensure that data being shared was as accurate as possible.

FINE launched the data center in early 2022, while campuses were still dealing with major disruptions from Covid-19. As a result, our response rate was much lower than expected. However, we were able to collect data from 63 campuses and we are excited to share some of that information with you here. As part of this effort, we also collected some publicly available data on all 183 campuses with dining services in New England.

A History of FINE’s Work in the Campus Sector

Since its inception in 2011, FINE has been working in the college sector. Recognizing the importance of this sector and the need to connect a growing number of farm to campus stakeholders across the region, FINE established its Farm & Sea to Campus Program in 2013 and then launched the New England Farm & Sea to Campus Network (FSCN) in 2015. The FSCN is a community of higher education and food systems stakeholders who connect, share, and collaborate to develop robust and transparent regional supply chains and educate campus communities about regional food systems. The FSCN stakeholders include dining directors, food service workers, faculty, administrators, farmers and fishers, non-profit partners, elected officials, and students.
